The cinnamon tree, known as Cinnamomum verum, is an evergreen tree from Sri Lanka. What we use as a spice is its inner bark, which has a very pleasant aroma, as well as an intense flavour that ranges from sweet to bitter. It has been used in the past in rural Spain to induce sleep in children. It was a relaxant used by rural mothers to put children to sleep when they went to work in the fields. Its use is also common in women when menstruation is delayed. Also, one of the medicinal benefits of cinnamon is that when there are abrasions on the tongue from eating or drinking hot things, the cinnamon stick is sucked or licked to soothe the pain and heal the taste buds. In addition, cinnamon has beneficial effects against diabetes and hypercholesterolemia (according to researchers at the Department of Human Nutrition at the Beltsville Research Center in Maryland): firstly, cinnamon intake helps to lower blood sugar levels in diabetics; secondly, as little as half a teaspoon can also help to lower cholesterol and triglyceride levels in the blood. One way of incorporating this spice could be by adding it to foods such as coffee, tea, juices, cereals or toast and chocolate with and without milk. It is used against colds, flu and bronchitis because of its strong warming effect. It is used as a stomach tonic as it facilitates the proper functioning of the digestive system, helping to expel gas and combat nausea, vomiting and diarrhoea. It is not suitable for people suffering from gastroduodenal ulcers. In high doses it can cause nervous disorders. It is very aromatic, sweet, pleasant, burning and sometimes bitter or astringent.
